We just really love tomatoes. So when you’re looking for something more than quick canned diced options to throw on… oh let’s say spaghetti squash (sliced length-wise, drizzled with olive oil, baked at 350° for 45 min, topped with black beans), we got you covered with this quick, smooth, and slightly spicy chili-inspired sauce! Or check out her chunky sister sauce (they’re women because women are usually pretty saucy 💁) here. (10-15 min, makes about 8-10 oz)
1 tbsp olive oil
3-4 garlic cloves
2 large tomatoes
1 tsp chili powder
1⁄4 tsp ground cumin
1⁄2 tsp cayenne pepper
black pepper to taste
Dice tomatoes and mince garlic.
Over medium heat, sauté garlic cloves in oil about 1 minute; then add tomatoes.
Throw in spices, and once fragrant, blend in food processor or blender… Enjoy!
