We wanted to get sauced again, but this time we kept it chunky because we were feeling funky…? Yeah, idk. Mix this in with the spaghetti squash nomz we talk about here, or it makes a nice pomodoro-ish sauce to combine with angel hair pasta and Italian marinated tofu. (10-15 min, makes about 8-10 oz)
1 tbsp olive oil
1 medium sweet onion
1 orange bell pepper
2 large tomatoes
1⁄2 fresh japeño
3-4 cloves garlic
1 tbsp oregano
black pepper to taste
Dice all veggies and mince garlic.
Over medium heat, sauté onions in oil until beginning to soften. Then add bell peppers until soft. Add japeños, garlic and seasonings.
Throw in tomatoes, remove from heat, and mash it all together … Enjoy!
