Nothing more to say here other than, “Zucchini….” Just kidding, let us tell you a little bit about why we love them (in case you’re unfamiliar with the deliciousness that is Zukes). Full of over 50% of your daily intake of vitamin C in just one squash, zukes have anti-inflammatory properties and antioxidants that help keep your heart and eyes up n’ runnin’. They’re low in carbs and sugar, so you can pair them with the other deliciousness that is BEANS without feeling guilty for eating a high-carb meal. Aside from the health benefits, once you sauté or bake with some garlic, salt and pepper they become mushy green goodness we personally can’t get enough of. (20 min prep, 30 min bake, makes 6 boats – about 3 servings)
3 large zucchinis
¼ white onion
2 garlic cloves, minced
1 tbsp oregano
½ tbsp basil
½ tbsp paprika
black pepper to taste
14oz(1 can)cannellini beans
1½ cups marinara sauce
1 cup vegan motz chez*
Preheat oven to 400°.
Slice zukes in half long-ways and scrape out insides; set aside. Chop onion and mince garlic.
Sauté onion over medium heat until starting to brown. Mix in minced garlic until fragrant. Add spices, zuke scraps, and beans.
Spoon into boats, drizzle with marinara, and chez*.
Bake covered** for 30 min
*Optional, but it’s really yummy if you choose to use it
