Mandarin White Bean Hummus

Long story short: we went way too long without having a food processor. Thanks to Amazon Prime, J ordered one Friday and we got to experience its amazingness Sunday morning. The first thing we wanted to make? HUMMUS! We had a crap-ton of oranges and beans laying around, so it was only right that we combined the two. After a little experimentation, we definitely think we’re on to something with the citrus hummus thing… Oh and L ordered a food processor for herself immediately upon finishing this dip. It’s safe to say we’re addicted. (Makes about 12-15 oz)

14oz (1 can) cannellini white kidney beans
2½ tbsp tahini
½ tbsp coconut oil
1½ tbsp fresh basil
1½ tbsp fresh mint
¼ tsp cardamom
1 tsp garlic powder
½ tsp black pepper
½ tsp salt
juice of 1 mandarin orange

food processor hummusDrain and rinse beans. Combine all ingredients in a food processor. Eat!

We garnished ours with orange bell pepper, fresh basil and mint, a teensy bit of coconut oil, and paprika! Enjoy with pretzels, pita chips, bell peppers, or blueberries (weird, but J loved it).
