Lavender Vanilla Cookie Nugs

I’d like to preface this with: we are by no means bakers. We wanted some variety for you all, so we took on the challenge of creating our own vegan baked good. While making these, L continuously said to her boyfriend, “Babe, I think I f**ked up.” And to her surprise, they turned out AWESOME! These nugs are buttery (without actually using any fatty butter), flavorfully refreshing, and naturally dyed. Not to mention made with lavender which has numerous health benefits including helping to alleviate anxiety and reduce inflammation in the body.

Makes about 40 small cookies

For the nugs:

1 cup refined coconut oil, room temp
1¼ cup granulated sugar
2 tbsp almond milk (or your favorite nondairy milk)
3 tsp pure vanilla extract
2 drops lavender essential oil
2½ cup flour
1 tsp baking soda
1 tsp salt
Blueberry icing (recipe below)
Pearl sprinkles

For the Icing:

2 tsp blueberry concentrate (recipe below)
3 tsp water
1 cup powdered sugar
1 tsp brown rice syrup
1-2 drops lavender essential oil

For the Blueberry Concentrate:

¼ cup frozen blueberries
¼ cup water

Preheat the oven to 350°.

Add the oil and sugar into a large mixing bowl and whisk until well combined. Add the milk and vanilla, stir, then sift in the flour, salt, and baking soda. Mix until everything is combined and you have a moist, crumbly dough. With your hands, roll about tablespoon size balls of dough and place on ungreased baking sheet.

Bake for 10 minutes, checking at around 8 minutes to ensure the bottoms are not burning. Let sit for at least 5 minutes once finished baking.

While the nugs are in the oven, make the blueberry concentrate. Put the blueberries and ¼ cup water in a small saucepan over medium heat. Bring to a boil then smoosh each berry. Turn down, cover, and let simmer for 10 minutes.

Now for the icing. In a medium bowl, mix together the powdered sugar, 2 tsp blueberry concentrate, and 3 tsp water until fully combined. Add the brown rice syrup and 2 drops lavender*. Mix.

Ice each nug and drop the sprinkles on top however you please. Eat the Nug Nomz immediately**.



*Be extremely careful with the drops of lavender. Oils are a concentrate; they are very potent. Drop out too much and your icing will become soapy-tasting.
**Eat within 2 days. The cookies get harder the longer they sit.
