Just because vegans eat plant-based doesn’t mean we can’t indulge in chocolate-y dessert every now and then! Though it’s often difficult to find dairy-free chocolate options in stores and restaurants, we’re not stopped from making our own. Masking the flavor of avocado with cocoa powder and sugar, this (vegan) chocolate mousse is honestly the best we’ve ever had. (Makes about 15 oz – or 2 large servings)
½ cup cocoa powder
½ cup cashew milk
2 tbsp coconut oil
2 tsp vanilla extract
⅔ cup confectioner’s sugar (+ a little more for garnish)
¼ – ½ cup vegan chocolate chips
strawberries & raspberries for garnish
Over low heat, warm oil in a small pot. Stir in the milk and vanilla extract, then whisk in the cocoa powder and sugar until the mixture becomes smooth.
Cut the avocados in half and spoon into a food processor. Add the chocolate mixture and puree until mixed well. Scoop the mousse into a bowl and fold in the chocolate chips. Chill in fridge for at least 2 hours. Serve with strawberries, raspberries, and extra sugar on top!
