Savory Oats

Everyone defaults to sweet oat bowls. Don’t get us wrong, we love our sweets, but we don’t always like to start our day off with sugary foods. Most people struggle to get a sufficient number of veggies in their diet. Three cups are the ideal amount one should consume in a day to contribute towards a well-rounded diet. Why not kick start your morning with veggies? These oats put a Nomz spin on the typical oatmeal we all know and love.

1 ½ cup old fashioned oats
3 cups cashew milk (or other nondairy milk)
1/3 cup yellow onion, diced
2 heaping cups spinach
1 garlic clove, minced
½ tsp garlic powder
1/8 tsp turmeric
¼ tsp paprika
¾ tsp sea salt
¾ tsp black pepper
1 tbsp chia seeds
3 tbsp water

(Makes 3-4 servings)

Preheat oven to 350°.

In a small bowl, combine the chia seeds and water. Whisk together for a minute, then let sit for at least 5 minutes. It should take on a gelatinous consistency.

In a medium pan over medium heat, sauté onions and minced garlic for 2-3 minutes. Add the spinach and cook for about 3 minutes longer.

Combine all ingredients in a 2-quart oven-safe tin. Bake for 40 minutes.
